A tasty recipe which brings together classic Chinese ingredients. Mix together black beans, wine, ginger, soy sauce and garlic.
Black beans are a specialty of Cantonese cooking and give a pungent, salty taste to stir-fried dishes. Core tomatoes and cut them into 16 wedges. Crush the black beans, add the water and set aside.
Cutting the meat into tiny strips reduces the cooking time of this dish. Heat the oil in a wok and fry the beef for 3-4 minutes. Add the onion, ginger, tomatoes and carrots. Stir fry for 2-3 minutes.
Pork with matchstick vegetables in a marvellous sweet sauce. Cut the onion, cucumber, red and green pepper and pineapple into thin matchsticks.
